利用豆都渣制备可食用包装膜研究(7000字)
摘 要:为了研制一种成本低、性能好、应用广泛的可降解食用薄膜, 以抗拉强度、感官指标、溶解速度及水滴漏时间等影响的研究, 确定了膜的组成和制备工艺条件。研究了豆腐渣、海藻酸钠、甘油等原料组分不同的添加量对膜性能的影响。通过单因素试验,确定可食纤维水溶包装膜配方为(以下均为质量分数):CMC1%、豆腐渣6%、海藻酸钠2%、MC0.5%、甘油1.5%。用此配方生产的可食纤维水溶包装膜强度可达22.5MPa, 且具有表面光滑、溶解速度快、阻水性好等特点。

Technical study on edible film composed of bean dregs
Abstract: In order to develop a low cost, good performance, widely used biodegradable edible films, with tensile strength, sensory indicators, dissolution rate and water dripping time were studied to determine the composition of the membrane and preparation conditions. Of the bean curd residue, sodium alginate, glycerin and other raw material components of different content on the membrane performance. Through single factor test, water-soluble edible fiber formula for packaging film (the mass fraction of all) were as follows: CMC1%, jerry 6% sodium alginate 2%, MC0.5%, 1.5% glycerol. Produced by this formula water soluble edible fiber packing film has ability for strength up to 22.5MPa, and has a smooth surface, dissolution speed, water resistance is good.
